Alexio Thomas Corleon joins the exciting new restaurant Harbor Court Bistro as executive chef. Playing on distinct gourmet flavors, sumptuous steaks and seafood, and unique signature cocktails, Harbor Court Bistro evokes a classic, yet casual dining experience in an intimate Downtown environment.

Chef Corleon is of Vietnamese descent and grew up in France, the culinary mecca of the world. With over 15 years experience in the restaurant arena, Corleon brings a depth of culinary knowledge that fuses numerous international tastes to create Harbor Court Bistro's eclectic menu. Chef’s cuisine leads diners on a savory journey to France, Italy, Asia, and the Mediterranean, bringing an exciting contemporary twist to every dish while using only the freshest ingredients.

Chef’s work experience includes Haleiwa Joe’s Seafood Restaurant in Kaneohe, Kapono’s in Aloha Tower Marketplace, and Jackie's Kitchen.
